QUESTIONS ABOUT A FOOD PLOT

I planted a small food plot with Tractor Supply Plotspike Forage Feast last fall. It came up really well and the deer used it a lot. I was thinking of disking it up and putting in some spring summer clover mix. But the Plotspike Forage Feast has grown into a lush green field with a lot of redtop clover and the deer are hammering it right now. My question is, would ya'll just mow this later on when it seeds out....fertilize it, lime it according to the soil sample I will send off and not replant this fall. Our winters are not so harsh, so we keep some green most of the year. OR, should I mow it about 8 inches high now...throw out some lime and fertilizer or wait until it seeds? OR, would ya'll overseed it now with the different clover, chicory commercial mix? , Thanks in advance. You can see what I am speaking of in this picture, hard to see much of the clover, but its there.
